If you have chosen the wine pairing with your meal, you are poured the 2013 vintage of the Hecht & Bannier Languedoc Rosé. The Languedoc-Roussillon region in Southern France is the biggest wine producing region in the world. Renowned for its rosé wines, the region reminds us that pink wines can be complex and deliciously dry. The Languedoc rosé is a blend of floral Syrah, soft Cinsault and rich Grenache grapes which are vinified in neutral concrete tanks, expressing the vibrant red currant and pomegranate flavors you taste.
A great Belgian classic, Chimay Tripel, is poured if you have selected the beer pairing. Chimay is an authentic Trappist beer, brewed within the walls of a Trappist Monastery under the control of the community of monks. You admire its golden color, perfumed aroma from the rich hops and balanced sweet yet bitter flavor with hints of Muscat grapes and ripe apple.
Wild King Salmon from the Pacific Northwest is Chef’s meal accompaniment for this course. The presentation reveals the wild salmon’s rich and succulent flavor, preserved by a gentle poaching in butter and served with salt boiled fingerling potatoes. We find that the salt boiled method allows the potato to boil at a very high temperature, developing the starches and resulting in a creamier potato. The dish is finished with a charred lemon infused olive oil creating a simple, but delicious combination of flavors.
